Rita’s Coconut Chocolate Cupcakes
Ingredients:
- 1 cup Superior Tofu Soy Drink
- 1 pkg Superior Tofu Coconut Soy Dessert (300g)
- 2 ¼ cup all-purpose flour
- 2/3 cup cocoa powder
- 1 tsp baking soda
- ¼ cup margarine
- 1 ½ cup sugar
- 2 squares baker’s chocolate
- 1 tsp vanilla extract
Preheat oven to 350F. Cream Coconut Soy Dessert and set aside. Melt margarine with chocolate. Remove from heat. Mix in sugar. Stir in Coconut Soy Dessert and Soy Drink. In a separate bowl, mix flour, cocoa, and baking soda together. Gradually stir the flour mixture into the liquid mixture. Pour batter into lined cupcake pan. Bake for 18 minutes. Makes 24 small cupcakes or 18 large cupcakes. Optional: Sprinkle coconut flakes prior to baking on top of cupcakes.
