Marinated Tofu Salad
Ingredients:

1 pkg Stir-fry Tofu, diced and blanché
1 cup each, mushrooms, celery, tomato, cut in slices
1/3 cup black olives, pitted
1 red or yellow pepper, cut in thick julienne strips
2 green onions, thinly sliced
1 clove garlic, chopped
1 1/2 tsp dried oregano
2 tbsp balsamic vinegar
1/4 cup olive oil
salt & pepper to taste
Dice tofu into squares. Combine vegetables with tofu in a large mixing or salad bowl. Add remaining ingredients and mix gently to combine. Marinate at room temperature for 30 minutes. Check seasoning before serving.
