Superior Soft Oatmeal Chocolate Chip Cookies
Ingredients:
- ½ pkg Superior Silken Tofu (260g)
- ¼ cup margarine, softened
- 1 tsp vanilla or vanilla extract
- 1 cup sugar
- 1 cup all purpose flour
- 1 cup quick cooking oats
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ¼- ½ cup chocolate chips or vegan carob chips *
Preheat oven to 375F. Cream tofu and set aside. In a separate bowl, cream margarine with sugar. Add tofu and vanilla. Mix dry ingredients together. Stir dry mixture into liquid mixture. Mix well to form batter. Drop a tablespoon of batter onto a non-stick or greased cookie sheet. Repeat as necessary. Bake 12 minutes. Makes 2 dozen cookies, depending on the size of the cookie.
