Superior Tofu Pasta Salad
Ingredients:

1 pkg Stir-fry Tofu, cut into thin strips
1 lb pasta
2 cups fresh vegetables, chopped
1/4 cup fresh parsley, minced
2 tbsp green onions, minced
Dressing:

1/2 cup olive oil
1/4 cup cider vinegar
2 tsp soy sauce
1 tbsp honey dijon mustard
1/4 tsp salt
Whisk dressing ingredients together.
Cook pasta in boiling water for 4 minutes or until al dente. Add vegetables.
Cook for 3 minutes. Rinse in cold water and drain. Add tofu.
Toss gently with dressing, parsley and green onions. Ready to serve.
