Egg Free Chocolate Cake

  • 1 pkg Superior Tofu Coconut Soy Dessert (300g)
  • ½ cup Superior Tofu Unsweetened Soy Drink
  • 1 tsp vanilla extract
  • ½ cup margarine
  • 1 cup brown sugar
  • 2 cups unbleached flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1/4 cup chocolate chips

Preheat oven to 350F. Sift all dry ingredients together and set aside. Whip margarine and brown sugar together until smooth. Add tofu, vanilla and soymilk and whip until well blended.  Add dry ingredients to mixture. Mix in chocolate chips. Pour into a 9″ cake pan and bake for about 30 to 35 minutes.
