Coconut Raisin Oatmeal Muffins

Ingredients:

  • 1 cup oatmeal
  • 1 cup Unsweetened Low Fat Soymilk, Scaled
  • 1 1/2 cup unbleached flour
  • 3 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 pkg Coconut Soy dessert (300g)
  • 2 tbsp vegetable oil
  • 1 cup raisins

Preheat oven to 380°F.  Mix oatmeal and Soymilk together, letting it cool before use. Whip soy dessert and vegetable oil together until smooth. Mix flour and all dry ingredients together.  Stir in oatmeal mixture and Soy dessert mixture.  DO NOT OVERMIX or your muffins will be chewy.  Stir in raisins and scoop into muffin tins (prep muffin tins by spraying with non-stick spray).  Turn heat up to 400°F. Bake for 20 to 22 min.  Remove muffins right away and cool on rack.

Double Banana Oatmeal Muffins
Substitute with Banana Soy Dessert, and 1 cup banana chips.

Mango Orange Cranberries Muffins
Substitute with Mango Soy Dessert, and 1 cup dried cranberries.
