Tofu & Tomato Salad Cup

Ingredients:

  • ½ pkg Soft Tofu (300g), drained and diced or ½ cup Soft Pressed Tofu, thinly sliced or ½ cup Smooth Med. Firm Tofu, drained and diced
  • 6 small to medium size tomatoes
  • ½ cup diced cucumber

Slice top of tomato and scoop out pulp.  Place tofu in the middle, add cucumbers.  Top with dressing.
