Creamy Dairy-free Potatoes
EGG and DAIRY FREE
Ingredients:
- 1½ cups Superior Tofu Soy Drink, Unsweetened
2 lbs small potatoes, sliced thinly
3 tbsp soy or regular margarine
1¼ cups water
2 tsp mustard
2 (10oz) frozen pearl onions
10 oz frozen peas
6 tbsp unbleached white flour or whole wheat pastry
Minced fresh parsley for garnish
Cook potatoes in boiling water for 15-20 minutes, until tender. Melt margarine in a pan. Add flour, soy milk, and water. Stir until mixture thickens. Add mustard, salt, and pepper to taste. Add onions and peas and heat for 5 minutes longer, stirring often. Add potatoes and garnish with parsley. Makes 6-8 servings.
