Fiery Meatless Chili
Ingredients:

1 pkg Superior Stir-fry Tofu, cubed
2 small onions, chopped
2 gloves garlic, minced
1 or 2 jalapeno pepper, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup frozen corn, defrosted
1 can (798 ml) diced tomato
1 can (348ml) red kidney bean
1 tbsp tomato paste
1 tbsp oil
½ tsp paprika
½ tsp chili powder
Sauté onions, garlic and spices in oil until fragrant. Add rest of the ingredients except corn and tomato paste. Bring to boil and simmer for 25 min. Add corn and tomato paste and simmer for another 5 minutes, until sauce has thickened. Add salt and pepper to taste. Skip jalapeno if you want a milder chili. Good make ahead dish as flavor will improve if you let it stand.
