Teriyaki Tofu Ribbons

Ingredients:

    1 pkg Superior Stir-fry Tofu, cut into ¼ inch lengthwise strips
    1 carrot, cut into lengthwise strips
    1 zucchini, cut into lengthwise strips
    ¼ cup toasted pinenuts

Marinade ingredients:

    1/2 cup Teriyaki sauce
    1/2 tsp fresh ginger, minced
    1 tbsp sesame oil
    1 tsp honey

Combine marinade ingredients in a bowl. Marinate the tofu strips for 15 minutes. Soak carrot strips in a bowl of cold water. Pan-fry Tofu and zucchini ribbons in a non-stick skillet for about 5 minutes or until slightly brown. Toss in raw carrot strips, top with toasted pinenuts.
