Mexi-Soy Scramble
EGG and DAIRY FREE
Ingredients:

1 pkg Superior Stir-fry Tofu, crumble
1 cup red onion, finely chopped
1 cup bell peppers and tomatoes, finely chopped
1 cup frozen corn, thawed
1 cup cooked black beans
1 tbsp vegetable oil
Seasoning ingredients:

1 tsp basil or cilantro
1 tsp garlic powder
1/4 tsp taco seasonings
Salt and pepper to taste
Sauté onion in oil until tender, add rest of the ingredients and stir-fry until the tofu starts to brown, about 3 minutes. Sprinkle seasonings and toss for 1 minute. Use as fillings for a tortilla or pita wrap and top with salad. Can also serve scramble on its own with toast.
