Cucumber Tofu Salad
Ingredients:

1 pkg Superior Stir-fry Tofu, julienne
1 English cucumber, julienne
1 cup carrot, cut into julienne strips
1 tsp sesame seeds, roasted
Dressing ingredients:

2 tbsp soy sauce
1 tbsp each, sesame oil, rice vinegar
1 tsp each, chili sauce, sugar
Blanch tofu strips in hot water for 2 minutes, drain and set aside to cool. Mix tofu with carrot and cucumber strips, Mix dressing ingredients together and toss over salad.
Garnish with roasted sesame seeds.
