Potato Dill Soup
EGG and DAIRY FREE

Ingredients:
- 1 pkg Superior Organic Silken Tube Tofu (260g)
- 1 tsp vegetable oil
- ½ cup onion, chopped
- 4 cups vegetable or chicken broth
- 4 medium potatoes, diced
- 1½ tsp dried dill weed
- salt & pepper to taste
In a saucepan, heat vegetable oil over medium heat and cook onion until soft and transparent. Add broth, potatoes and dill. Cook until potatoes are tender. Blend in tofu until smooth using a hand blender. If you prefer a thicker, chunkier soup, remove half of the potato mixture and blend with tofu in a food processor or blender. Then add the mixture back to your soup. Season to taste with salt and pepper. Heat. Ready to serve. Makes 6 servings.
