Vegan Cream Cheese

EGG and DAIRY FREE

Ingredients:

  • 1 pkg     Superior Organic Silken Tube Tofu (260g)
  • 2 tbsp    fresh chives, minced
  • 2 tbsp    fresh parsley, minced
  • 1 tbsp    safflower oil
  • 1 tsp      salt to taste
  • 1 tsp      fresh lemon juice
  • 1 tsp      dried basil or dill (optional)
  • ¼ cup     tomato, chopped or carrot, grated (optional)

In a blender or food processor, mix all the ingredients until smooth. Transfer the mixture to a small bowl. Cover and refrigerate for several hours to enhance the flavour. Ready to serve as a spread on crackers or melba toast or serve with vegetables as a dip. Makes 6 to 8 servings.
