Spicy Tofu Tomato Dip
EGG and DAIRY FREE
Ingredients:
- 1 pkg Superior Soft Tofu (300g)
- 2 tomatoes, seeded & cut into chunks
- 2 scallions, green parts only, thinly sliced
- 2 cloves garlic, pressed
- 2 tbsp extra-virgin olive oil
- 2 tsp balsamic vinegar
- ½ tsp red pepper flakes
- 1 tbsp fresh marjoram or oregano, minced or 1 tsp of dried herbs
- salt and freshly ground pepper to taste
Chop tomatoes and scallions in a blender or food processor until thoroughly mixed. Add the remaining ingredients and puree until smooth. Serve with vegetable sticks or crackers. Makes 8 servings.
