Spicy Tofu Tomato Dip

EGG and DAIRY FREE

 Ingredients:

  • 1 pkg Superior Soft Tofu (300g) 
  • tomatoes, seeded & cut into chunks
  • scallions, green parts only, thinly sliced
  • 2 cloves garlic, pressed
  • 2 tbsp extra-virgin olive oil
  • 2 tsp balsamic vinegar
  • ½ tsp red pepper flakes
  • 1 tbsp fresh marjoram or oregano, minced or 1 tsp of dried herbs        
  • salt and freshly ground pepper to taste

Chop tomatoes and scallions in a blender or food processor until thoroughly mixed. Add the remaining ingredients and puree until smooth. Serve with vegetable sticks or crackers. Makes 8 servings.

Per serving: 61.5 calories, 2.33g protein, 4.65g fat, 2.58g carbohydrates
