8 minutes Tofu Pasta Salad
Ingredients:
- 1 pkg Superior Stir-fry Tofu, cut into strips.
454g dry pasta (penne or rotinni)
2 cups fresh vegetables, chopped
1/4 cup fresh parsley, minced
2 tbsp green onions, minced
Parmesan cheese (optiona)
Dressing ingredients:
- 1/2 cup olive oil
1/4 cup cider vinegar
1 tbsp honey dijon mustard
1/4 tsp salt
2 tsp soy sauce
Whisk dressing ingredients together. Cook pasta in boiling water for 4 minute. Add tofu and vegetables to the pasta and cook for further 3 to 4 min. or until al dente. Drain and rinse in cold water. Toss gently with dressing, Top with grated Parmesan cheese to serve.
