Superior Soy Guacamole

EGG and DAIRY FREE

  • 1 pkg      Superior Soft Tofu (300g), well drained
  • 2-3 ripe    avocadoes, peeled and pitted
  • 2 cloves   garlic, finely minced
  • 1 tbsp      lemon juice
  • ¼ small    red onion, chopped
  • 2 small     tomatoes, finely chopped
  • 2 tbsp      fresh coriander, chopped (optional)
  • ½ tsp       cumin
  • salt & pepper to taste

Blend tofu, avocado, garlic, onion, cumin and lemon juice in a food processor or blender until creamy. Transfer to a bowl and add coriander and tomatoes. Add salt and pepper to taste. Refrigerate for half an hour or longer. Ready to serve with chips, vegetable sticks or crackers. Makes 8-10 servings.
