Superior Soy Spinach Dip

EGG and DAIRY FREE

Ingredients:

  • 1 pkg Superior Medium Firm Tofu (454g)
  • 1 pkg frozen spinach (10 oz), thawed and chopped coarsely
  • 1 can water chestnuts (8 oz), drained and chopped coarsely
  • 1 pkg dry Knorr’s vegetable soup mix
  • 3 green onions, diced       

Blend well drained tofu in a food processor or blender until smooth and creamy. Transfer to a separate medium size bowl. Add spinach, water chestnuts, green onions and soup mix to tofu mixture. Cover and refrigerate for at least a couple hours before serving. Stir well before serving. Serve with vegetable sticks, crackers or sourdough bread. Makes 2 cups. Dairy-Free.
