Japanese-Style Curry Tofu
A very easy and convenient entrée. According to the research done in Leicester University, curry is said to be a cancer fighter as well as preventing colds and the flu.
Ingredients:
- 1 pkg Superior Organic Extra Firm Tofu (350g), cut into squares
- 1 cup onions
- 1 pkg Japanese curry cubes
- 3 cups water
- 1/2 cup red bell pepper
- 1/2 cup potatoes
- 1/2 cup broccoli
- 1/2 cup cauliflower
- 1/2 cup carrots
Heat oil until hot and fry onion until golden brown. Add all vegetables and tofu in and stir fry for 5 minutes. Add water and add one package of curry cubes. Stir fry until evenly heated. Cook on low heat for 10 to 15 minutes. Ready to serve with rice. Makes 4-6 servings.
