No Cow Cheesecake
Ingredients:
- 1 pkg Superior Fresh Medium Firm (700g), drained
- 1/4 cup Safflower oil
- 1/2 cup honey
- 1 tsp salt
- 1 tsp vanilla
- 3 1/2 tbsp fresh lemon juice
- 1 cup graham cracker crumbs
- 1 cup frozen blueberries
- 2 lemon’s zest, chopped
Preheat oven to 325F. Press graham cracker crumbs onto the bottom of a springform pan. Put all the ingredients except blueberries into a food processer or blender. Blend until smooth. Fold in blueberries and bake for 1 hour 15 min or until firm.
