Coconut Oatmeal Cookies

Ingredients:

  • 1 pkg  Superior Coconut Soy Dessert 
  • 1 cup  rolled oats
  • 1 cup  flour
  • ¼ cup  margarine
  • ½ tsp  baking soda
  • 1 tbsp  hot water
  • ¼ cup  shredded coconut

Preheat the oven to 350F. Mix the flour and oatmeal together. Whip the Soy Dessert and margarine together. Mix the baking soda and hot water together and add it to the Soy Dessert mixture. Pour it into the flour mixture and mix well. Drop the mixture on a baking tray lined with parchment paper. Spoon shredded coconut onto the cookies. Press and flatten the cookies. Bake for 20 minutes. Let cool on a wire rack. Makes 12 cookies.
