Cream Corn and Tofu Soup
Ingredients:
- 1/2 pkg Superior Soft Tofu, diced
- 1 can cream corn
- 1 egg white
- 1 sprig cilantro
- 2 tbsp cornstarch
- 500ml water or stock
Place cream corn in a thick-bottomed pan, cover with water or stock. Bring to the boil and skim. Add the diced tofu and re-boil. Thicken the soup with cornstarch. Re-boil, correcting the seasoning and consistency.
