Cranberry Watermelon Clouds with Melon Curls
EGG and DAIRY FREE
Ingredients:
- 2 pkgs Superior Watermelon Soy Dessert
- 1 pkg gelatine
- 1/2 cup icing sugar
- 1 tbsp dried cranberries (reconstituted and chopped)
Garnish
- assorted melon curls
- fresh mint leaves
Dissolve gelatine according to instructions on the package. Cool at room temperature. Chill the food processor bowl or mixing bowl before using. Add the Watermelon Soy Dessert and whip on high while gradually adding gelatine and icing sugar. Continue to whip until smooth. Fold in cranberries by hand. Let mixture sit for 2 minutes or until slightly thickened. Working with two spoons, gently drop 2 tablespoons of cranberry watermelon mixture onto a tray lined with wax paper. Repeat until all of the mixture is used up. Refrigerate until the clouds set. Line plates with melon curls and drop clouds onto the curls. Garnish with fresh mint leaves.
