Coconut Soy Custard

Ingredients:

  • 1 pkg  Superior Coconut Soy Dessert
  • 1 cup  Low Fat Superior Soy Drink, Unsweetened
  • eggs, beaten
  • 1 tsp  vanilla extract
  • 1 tsp  cinnamon
  • 1 cup  sugar

Preheat oven to 350F. Heat unsweetened soy drink. Do not boil. Whip Coconut Soy Dessert with eggs in a blender or with a mixer. Strain mixture with a sieve into a large bowl. Pour hot soy drink into the soy dessert misture SLOWLY. Pour into six oven proof (4 oz.) custard cups. Place cups into a deep baking tray. Fill the tray with hot water halfway up the side of the cups. Bake for 30 minutes or until set. Mix sugar and cinnamon together and sprinkle on top. Serve hot or cold.
