Sensational Soy Pudding
EGG and DAIRY FREE
Ingredients:
- 1 1/2 cup Low Fat Superior Soy Drink, Unsweetened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- 1/8 tsp salt
In a saucepan, stir together the sugar, cornstarch and salt. On medium heat, slowly add soymilk to the pan, gently stirring to prevent any lumps from forming. Bring the mixture to a boil. Lower to simmer, stirring constantly for about 5 minutes, until mixture is creamy and thick. Remove from heat. Stir in vanilla and pour into dessert cups. Chill until mixture sets. Serve cold.
Variations:
Almond or Maple Pudding – Add a small amount of almond flavouring or maple syrup when adding the soymilk.
Chocolate Pudding – Add approximately 1/3 cup of cocoa powder. Mix with the dry ingredients at the start.
