Superior Soymilk Scones

EGG and DAIRY FREE

Ingredients:

  • 3/4 cup Low Fat Superior Soy Drink, Sweetened
  • 2 cups unbleached all-purpose flour
  • 3 tsp baking powder
  • 3/4 tsp salt
  • 6 tbsp soy or regular margarine 

Preheat the oven to 425º F. Lightly grease a baking sheet or line with parchment paper. Mix the flour, baking powder, and salt together. Using a pastry cutter or fork, cut the margarine into the flour until the mixture resembles coarse crumbs. Stir in soymilk gradually. Form the dough into a ball. On a floured surface, roll the dough out about 2 inches thick. Cut into 2-inch rounds with a biscuit or cookie cutter. Place on baking sheet and bake for 15 minutes. Cool and serve. Can also be served with Flavourful Brown Sauce or with jam or preserves. Makes a dozen scones.

Variations:
Fruit Scones – Add 1/4 cup berries to dough mixture
Raisin/Current Scones – Add 1/4 cup raisins or currents to dough mixture
Citrus Scones – Add zest of 1 lemon or orange peel to dough mixture
