Rita’s Soy Whipping Cream

EGG and DAIRY FREE

Ingredients:

  • 1 cup Superior Soft Tofu, drained & mashed
  • 3 tbsp canola oil
  • 3 tbsp powdered sugar
  • 1 tsp vanilla
  • 1 tsp fresh lime juice 

In a blender, mix all the ingredients until smooth. Cover and refrigerate before using. Serve as a dairy-free topping in place of whipping cream on fresh fruit, pies, gelatins and parfaits. Makes 1 cup.

Almond Whipping Cream:
Substitute 1 tsp almond extract for vanilla and lime juice.
