Easy Tofu Frosted Chocolate Cake

Ingredients:

  • 1 pkg (240g) Superior Silken Tube Tofu
  • 1 pkg chocolate cake mix* (one layer size)
  • 3 tbsp sugar
  • 3 tbsp cocoa
  • 1 tsp margarine

* For a vegan cake, use a brand with no egg or dairy content. 

Follow instructions on package and prepare cake mix. Substitute 1/3 cup of tofu for one egg. Pour batter in a 8”square cake pan and bake for 25-30 minutes at 350° F or as directed on package. Use a toothpick to check if cake is ready – if it comes out clean, remove from oven. Spread tofu frosting over cooled cake. If desired, dress up the cake with chocolate shavings or sprinkle cocoa powder mixed with icing sugar or serve with fresh fruit. For an even more decadent dessert, drizzle Rita’s Tofu Chocolate Sauce over the cake. Makes 16 dessert-size servings.

Creamy Tofu Frosting:
Blend remaining tofu with sugar, cocoa and margarine until smooth.
