Terrific Tofu Antipasto

Ingredients:
- 1 pkg (454g) Superior Medium Firm Tofu*
- 1/3 cup black olives, pitted
- 1 cup mushrooms, quartered
- 1 cup celery, cut in half-inch slices
- 1 1/2 cups of tomato, diced in large pieces
- 1 red pepper, cut in thick julienne strips
- 1 yellow pepper, cut in thick julienne strips
- 2 green onions, thinly sliced
- 2 clove garlic, chopped
- 1 1/2 tsp dried oregano
- 2 tbsp balsamic vinegar
- 1/4 cup olive oil
- salt & pepper to taste
*If desired, reduce the amount of tofu required. Also, can substitute with Superior Organic Medium Firm or half a package of Superior Fresh Twin Pack.
Drain tofu and pat dry. Dice into squares. Combine vegetables with tofu in a large mixing or salad bowl. Add remaining ingredients and mix gently to combine. Marinate at room temperature for 30 minutes or more to allow the flavours to absorb better. Check seasoning before serving.
