Vegetable Medley Soup
TOFU TIMESAVER

Ingredients:
- 1 pkg (330g) Superior Organic Medium Firm Tofu or Organic Smooth Tofu
- 1 can vegetable broth
- 1 cup diced vegetables (broccoli, carrots, mushrooms, etc.)
- 1/2 cup rotini or other pasta, cooked
- chives or green onions, chopped
Dice tofu into 1/2-inch cubes. Add tofu cubes, vegetables and pasta to broth and bring to a boil on medium heat. Simmer until vegetables are at desired tenderness. Garnish with chopped chives or green onions. Serve.
