Vegetable Medley Soup

Ingredients:

  • 1 pkg (330g) Superior Organic Medium Firm Tofu or Organic Smooth Tofu
  • 1 can vegetable broth
  • 1 cup diced vegetables (broccoli, carrots, mushrooms, etc.)
  • 1/2 cup rotini or other pasta, cooked
  • chives or green onions, chopped
     

Dice tofu into 1/2-inch cubes. Add tofu cubes, vegetables and pasta to broth and bring to a boil on medium heat. Simmer until vegetables are at desired tenderness. Garnish with chopped chives or green onions. Serve.
