Rita’s Hearty Vegetarian Chowder
EGG and DAIRY FREE
Ingredients:
- 2 pkgs (140g each) Superior Tofu Puffs, cut into halves or quarters
- 2 cups Low Fat Superior Soy Drink, Unsweetened
- 2 tbsp oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 3 celery stalks, chopped
- 2 cups water
- 2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp celery seed
- 2 large potatoes, peeled & cubed (approximately 2 cups)
In a large 4-6 quart pot, sauté onion, carrots and celery on medium heat with oil for approximately 15 minutes or until brown. Add water and soymilk to vegetables. Add tofu puffs. Season with salt, pepper and celery seed. Bring mixture to a boil and add potatoes. Simmer until potatoes become soft. Ready to serve. The tofu puffs will soak up some of the chowder and provides a heartier meal adding texture to the soup. Makes 2 quarts.
