Rita’s Crispy Tofu Medallions

Ingredients:

  • 1 pkg (240g) Superior Silken or Silken Egg Tube Tofu
  • 1 small egg, beaten*
  • breadcrumbs
  • pinch of spicy salt (optional)

*Option: replace egg wash with water.

Gently cut silken or egg tofu into 1″ medallion-shaped slices. Soak in egg wash and coat with bread crumbs. Heat oil in a skillet and fry tofu medallions until golden. Sprinkle with spicy salt if desired. Ready to serve.

Option: Instead of frying, bake medallions on a well-greased cookie sheet in the oven.
