Superior Tofu Pasta Salad

Ingredients:

  • 1 pkg Superior Organic Medium Firm Tofu (330g), cut into thin strips
  • 1 lb rotini or fusili pasta
  • 2 cups fresh vegetables, chopped (any desired combination such as celery, cucumber, tomatoes, carrots, corn, etc.)
  • 1/4 cup fresh parsley, minced
  • 2 tbsp green onions, mincedĀ 

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup cider vinegar
  • 2 tsp soy sauce
  • 1 tbsp honey dijon mustard
  • 1/4 tsp saltĀ 

Whisk dressing ingredients together. Cook pasta in boiling water for 4 minutes or until al dente. Add vegetables. Cook for 3 minutes. Rinse in cold water and drain. Add tofu. Toss gently with dressing, parsley and green onions. Ready to serve. Makes 6-8 servings.
