Mexi-Soy Scramble Burritos

EGG and DAIRY FREE

Ingredients:

  • 1 pkg Superior Organic Extra Firm Tofu (350g), well-drained
  • 1 tbsp vegetable oil
  • 1/4 cup onion, finely chopped
  • 1/8 cup bell peppers and tomatoes, finely chopped
  • 1/8 cup canned corn, drained
  • 1 tbsp nutritional yeast (optional)
  • 1 tsp basil or cilantro
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric (optional – provides yellow colour resembling eggs)
  • salt and pepper to taste 

Sauté onions, bell peppers and corn until tender. Gently crumble tofu by hand or with a fork or potato masher. Mix tofu with the remaining ingredients. Stirfry until tofu starts to brown. Use as filling for a tortilla or pita wrap and top with salsa. Can also serve scramble on its own with toast. Makes a great cholesterol-free breakfast, lunch or dinner item. Makes 4-6 servings.
