Superior All-Occasion Soy Crêpes
Ingredients:
- 1 1/2 cup Low Fat Superior Tofu Soy Drink, Sweetened
- 1 cup flour
- 2 eggs
- 1 tsp oil
Combine ingredients and beat until smooth. Heat lightly greased nonstick pan. Remove from heat and pour a small amount of batter into pan. Tilt pan to spread batter. Brown both sides. If desired, use unsweetened Superior Tofu Soy Drink, but add 1 tbsp of sugar. Makes 18 crêpes.
Breakfast or Dessert Crêpes: Fill with fresh fruit or preserves and sprinkle with confectioner’s sugar.
Dinner Crêpes: Use unsweetened Superior Tofu Soy Drink and add 1/4 tsp salt. If desired, add finely diced chives or cooked onions to batter. Add your favourite savory filling.
