Cucumber & Tofu Tomato Salad
EGG and DAIRY FREE

Salad:
- 4 cups cucumbers, sliced
- 3 cups tomatoes, chopped
- 2/3 cup onion, chopped
- 1 cup celery, chopped
- 1/2 cup parsley, chopped
Dressing:
- 1 tube Superior Silken Tofu (260g), mashed
- 3 tbsp lime juice
- 1 tbsp oil
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
Blend dressing ingredients together in a blender until smooth and set aside. Mix vegetables together in a salad bowl. Mix dressing with salad. Ready to serve. Makes 6-8 servings.
