Rita’s Egg-Free Egg Salad
EGG and DAIRY FREE
Ingredients:
- 1 pkg Superior Medium Firm Tofu (454g), well drained and dried
- 1/3 cup mayonnaise or Tasty Tofunnaise
- 1/4 cup celery, finely diced
- 1/4 cup onion, finely diced
- 1/4 cup green onions, chopped (optional)
- 1 tsp fresh parsley, chopped
- 2 tbsp Dijon or yellow mustard
- 1/8 tsp cayenne pepper (optional)
- 1/8 tsp tumeric (adds yellow egg-like colour)
- salt & pepper to taste
Mash well drained tofu with a fork. Add ingredients until well mixed. Refrigerate for at least 30 minutes but preferably longer so that the tofu will better absorb the flavour of the other ingredients. Gently stir before serving. Add salt and pepper to taste. Serve on whole grain breads with tomato and lettuce as a sandwich or in tortilla or pita wraps. Can also serve with crackers or melba toast. Makes 4 servings.
