Rita’s Low Fat Banana Squares
EGG and DAIRY FREE
Ingredients:
- 1 pkg Superior Banana Soy Dessert * (Don’t Drain)
- 1/3 cup vegetable oil
- 1 cup flour
- 1 cup quick cooking oats
- 1/3 cup raisin
- 1/3 cup cranraisins
- ½ tsp baking soda
- ¼ tsp salt
- 1/3 cup granola (topping)
Preheat oven to 375 F. Empty soy dessert into a bowl & whip with a mixer. Add oil and mix well. Set aside. Mix dry ingredients, except granola, and fold into soy dessert mixture. Pour into a 8”
square or 6” x 9” oblong pan. Sprinkle granola on top and gently press into batter. Bake for 15-20 minutes. Test with a toothpick. Cool and cut into squares. Makes a healthy vegan snack ideal
for breakfast or any time of the day.
* Can substitute Banana Soy Dessert with other flavours:
Sweetened, Almond, Coconut, Mango or Watermelon.
