Banana Baked French Toast

Ingredients:

  • 1 cup Superior Low Fat Soy Drink, Sweetened
  • 1 pkg Superior Silken Tube Tofu (260g)
  • 3 ripe bananas, peeled & sliced
  • 1/2 cup applesauce
  • 1/8 tsp nutmeg
  • 1 tbsp honey or brown sugar
  • 2 tbsp dark rum or 1 tsp rum extract – optional
  • 1 tbsp vanilla extract
  • 8 slices french bread, cut diagonally
  • 2 tbsp soy or regular margarine

Preheat oven to 425° F. Blend soymilk and silken tofu. Add nutmeg, sweetener, rum and vanilla extract and mix well. Grease baking dish with margarine. Dip bread slices in tofu mixture; arrange in dish. Top with banana and applesauce. Bake for 20 minutes or until brown.
