Sinful Soy Pancakes

Ingredients:

  • 1 pkg Superior Silken Tube Tofu (260g)
  • 1 1/2 cups Superior Low Fat Soy Drink (Sweetened)
  • 1 1/2 cups all-purpose flour
  • 2 tbsp honey or sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp safflower oil
  • 1/4 cup blueberries or other fruit
     

In a bowl, combine all the dry ingredients together. In a blender, mix soymilk, tofu and oil together until well blended. Add to dry ingredients, gradually mixing with a few swift strokes until smooth. Add berries or fruit to batter. Pour mixture onto a non-stick skillet and cook individual pancakes over medium heat. Flip once until browned on each side. Ready to serve with maple syrup, preserved fruit or jam. Makes 4-6 servings.
